Root Vegetable: This December is the perfect time to start thinking ahead for January: The body, mind, and spirit are begging to function at their best, according to Dr. Bill Cole. According to the National Foundation for Cancer Research, “Rutabagas, carrots, turnips, and sweet potatoes have a high supply of carotenoids, an organic pigment whose anti-cancer effects were proven by Helmut Sies, M.D., an NFCR-funded scientist for over 30 years. Carotenoids are understood to decrease the risk of eye disease and even certain cancers.”
Root vegetables contain vitamin C
Root vegetables are high in vitamin C, which protects healthy cells from mutations that can lead to cancer, and it may also reduce blood pressure and raise iron deficiencies.
Root vegetables offer the body complex carbs and starch
These edible roots contain vitamins, minerals, and nutrients like complex carbs and starch, which Harvard Health reveals are important for energy if they are prepared in a healthy way.
