Root Vegetable: This December is the perfect time to start thinking ahead for January: The body, mind, and spirit are begging to function at their best, according to Dr. Bill Cole. When asked about the preparation of these foods, Dr. Cole shared that how meals were prepared with root vegetables was just as important as including the superfoods. “Root vegetables are a fantastic addition to any meal, and often, individuals forget about the power when they make them the star of the plate.” In fact, they can easily be added to a breakfast repertoire with an egg or sprinkled over quinoa for lunch, the flavors and benefits of root vegetables are hard to beat.

Root veggies are often called “the powerhouse of nutrition” because each of them packs quite a punch of fiber and antioxidants–all while being low in calories. Also, a fantastic source of carotenoids, or antioxidants that protect the immune system, these valuable food options do more than most may think.

Root vegetables can decrease the risk of certain types of cancers

According to the National Foundation for Cancer Research, “Rutabagas, carrots, turnips, and sweet potatoes have a high supply of carotenoids, an organic pigment whose anti-cancer effects were proven by Helmut Sies, M.D., an NFCR-funded scientist for over 30 years. Carotenoids are understood to decrease the risk of eye disease and even certain cancers.”

Root vegetables contain vitamin C

Root vegetables are high in vitamin C, which protects healthy cells from mutations that can lead to cancer, and it may also reduce blood pressure and raise iron deficiencies.

Root vegetables offer the body complex carbs and starch

These edible roots contain vitamins, minerals, and nutrients like complex carbs and starch, which Harvard Health reveals are important for energy if they are prepared in a healthy way.

From mashed sweet potatoes to oven-roasted carrots, turnips and onions, Dr. Cole shared that it’s important to remember to keep additives like sugar, salts, and butter out to let the veggies do their work.
