Soaps are salts of sodium or potassium fatty acids formed by the hydrolysis of fats in a chemical reaction called saponification. Each soap molecule has a long hydrocarbon chain, sometimes called a “tail,” with a carboxylate “head.” Sodium or potassium ions float freely in the water, leaving a negatively charged head.

How Soap Cleans

Soap is an excellent cleaner due to its ability to act as an emulsifier. An emulsifier is capable of dispersing one liquid in another immiscible liquid. This means that while oil (which attracts dirt) does not mix naturally with water, soap can suspend the oil or dirt enough to remove it.

The organic part of natural soap is a negatively charged polar molecule. Its hydrophilic carboxylate group (-CO2) interacts with water molecules through ion-dipole interactions and hydrogen bonds. The hydrophobic (water-repellent) part of a soap molecule, its long chain of nonpolar hydrocarbons, does not interact with water molecules.

Hydrocarbon chains are attracted to each other by dispersion forces and group together into structures called micelles. The carboxylate groups form a negatively charged spherical surface in these micelles, with the hydrocarbon chains inside the sphere. Due to their negative charge, soap micelles repel each other and remain dispersed in water.

Fats and oils are nonpolar and insoluble in water. When soap and contaminating oils remain mixed, the nonpolar hydrocarbon portion of the micelles breaks up the nonpolar oil molecules. A different type of micelles then forms with nonpolar dirt molecules in the center. This way, the grease, oil and “dirt” that sticks to them are trapped in the micelle and can be removed by washing.

The Disadvantage of Soap

Although soaps are great cleaning products, they do have disadvantages. As salts of weak acids, mineral acids convert them to free fatty acids:

These fatty acids are less soluble than sodium or potassium salts and form a precipitate or soap scum. For this reason, soaps are ineffective in acidic water. Also, soaps form insoluble salts in hard water, such as water containing magnesium, calcium, or iron.

Insoluble salts form bath rings, leave films that reduce hair shine, and make textiles gray or rough after repeated washing. However, synthetic detergents can be soluble in acidic and alkaline solutions and do not form insoluble precipitates in hard water.
